Hands down—and for obvious reasons—the main draw at Pacific Northwest brewing legend John Harris’ gastropub is the beer. Sure, his bar team twists some classic cocktails—the Valentina is essentially a lemon drop made with ginger vodka and a sugar and nutmeg rim—but you’re walking through the doors to sample one of Harris’ seven carefully crafted house drafts (some of which are the result of collaborating with other brewing legends) or an eighth tap reserved for guests brews he thinks are worth the pour. And as every beer lover knows, nothing pairs with a pint quite like chicken wings. Ecliptic does them, but not they way you’d think. First, they’re not wings—they’re drumsticks that have been have been given a confit for 24 hours, glazed with a sweet and spicy sauce, and then served—like wings should be—with celery, only the celery here’s been sliced and diced into a spare, crunchy salad. The kitchen also puts out a Mediterranean-inspired veggie burger—an eggless cracked farro patty that’s been deep fried and slipped between a ciabatta roll with cucumbers, a kalamata olive spread, red onions, and slabs of feta cheese. It actually eats more like a falafel, except—surprisingly for a falafel or even your usual veggie burger—it’s far less messy. And if you skip the cheese, the whole thing’s vegan. Plus, it fills you up without weighing you down—which leaves room for another pint. Happy hour lasts from 3 to 6 p.m. every day.
