You might say that the six-page spread in this month's O Magazine is the cherry on top of a long history of press accolades for Vitaly Paley. The story extols the virtues of this sweet fruit and why they're Paley's favorite. Pastry chef Laren Fortang and Paley provide six juicy recipes: goat cheese cheesecake with spiced cherry topping; salad of spicy greens, cherries, proscuitto and goat cheese; couscous salad with dried cherries and hazelnuts; roast duck with cherries; classic cherry pie; and cherry-ricotta doughnut holes with chocolate sauce.
Northwest cherries are in season from the first week of June until the end of August. Pick some up at your neighborhood farmers market or enjoy them at Paley's Place in northwest Portland.
