Recipe for a Snowy Morning

Waking up to snow in North Portland again (a little more than in other parts of the city- or so I've heard from friends in other quads.) On these cold wintry days my first thoughts go to making snow angels.
 
The second thought- hot chocolate! And what goes better with a hot mug of sweet chocolaty goodness? Fresh baked scones, of course.I quickly got busy in the kitchen and wha-la:  fluffy cherry-vanilla scones and a mug of rich, dark, homemade hot chocolate. Both are surprisingly easy and quick to make.
 
Hot Chocolate

Take 1 to 2 ounces (depending on your taste) of good quality dark chocolate (like Dagoba or Scharffen Berger) melt down slowly in double boiler. Add 8 to 10 ounces of milk and whisk together over medium heat until thoroughly mixed. Add sweetener to taste. (I don't add anything because I like the rich dark chocolate flavor unsullied by sugar.) Enjoy!
 

Cherry Vanilla Scones

2 cups all purpose flour

7 tsp sugar

2 tsp baking powder

¼ baking soda

1/3 cup cold butter

¼ cup milk, buttermilk, half and half, cream or soymilk

1 egg

1 cup dried cherries

2tsp vanilla extract or 1 tsp fresh vanilla bean

 

Combine dry ingredients and set aside (if you like you can add the zest of lemon or orange to these dry ingredients.) Cut in the butter until mixture is crumbly. In a separate bowl combine wet ingredients. Add cherries and wet ingredients to dry bowl, stirring until soft dough is formed. Dump out onto a floured surface and knead gently 8 times or so. Pat into a circle and cut into wedges. Makes 8 to 10 scones. Place one inch apart on an ungreased baking sheet. Brush with milk and dust with fine grade baker's sugar (or larger crystals if you like.) Bake at 400 degrees for 13-15 minutes or until golden. Place on wire rack to cool and serve. Yum!
