Happy Birthday Trébol

Trébol recently passed its one year mark featuring Mexican cuisine from chef and owner Kenny Hill and creative cocktails created by bar manager Justin Akins. Just in time for summer dining, Trébol expanded its outside patio and added new summer menu items featuring Pacific Northwest ingredients – from Quinault razor clams and salad greens to berries and tomatoes. Kenny Hill, chef/owner of Trébol learned the importance of forging local partnerships with farmers and fisherman during his eight years at Higgins. Now, in charge of his own kitchen and menu, Hill loves changing his culinary direction with each shift in seasons.

“I keep the focus on Mexican cuisine, but I love to add some of my favorite local ingredients when the season changes such as razor clams, berries and tomatoes,” said Hill.

Summer Specials…and new Torta Hamburgesa

New on the Trébol menu is an all natural hamburger made with Cascade Natural beef, as well as summer specials featuring local seasonal ingredients:

  • Torta Hamburgesa made with Cascade all natural beef on a house-made caramelized leek bun with a house salad and pickles. The Torta comes with the option of adding house-made bacon and queso asadero.
  • Freshly caught, pan-fried Quinault Razor clams with jalapeño vinaigrette slaw, cumin and chili dusted potatoes and avocado salsita.
  • Spicy mixed green salad tossed with a chorizo vinaigrette, house-made chorizo, grilled ricotta salata cheese and chili spiced lemon wedges.
  • Tres leches with mixed berries.
  • The beverage program now features the house margarita with fresh lime juice and organic agave nectar. Summer margarita specials ($8) include Strawberry/Basil, Blood Orange/Mint and Kiwi/Cucumber. Specialty cocktails range from a Margarita Tamarindo with silvery tequila, orange liquer and a puree of tamarind to the La Loca with gin, cucumber, basil, fresh lime and sparkling white wine. Some happy hour food specials include Sopes: Masa Cakes topped with black bean puree and smoked pork ($5), Enchiladas de Queso ($5) and Flautas de Carne ($5). The patio is open for happy hour daily from 5 p.m. to 6:30 p.m. and 9 p.m. to close, as well as dinner and Sunday brunch.
